African Mofongo Recipe

Although mofongo is a Puerto Rico dish. But many Africans who live there are descendants of this place. Puerto Rico has a majority population of Africans who live there. Hence the mofongo dish has an impact on African culture. This dish is made from unripe green plantains. It is mostly served with seafood and vegetables.

This dish has exotic flavors. Once you try out this dish, you will want to eat it again. It is a flavorful dish because of its origin in Africa. The African mofongo can be served with fish or chicken broth. Also, it can be served in soaps. Similarly, it can be served simply without any broth or soap.

Looking back at history, mofongo recipe is made using the African people technique. In this technique, people mashed starchy vegetables. Next, they poured some liquid to make the vegetables soft and tender.

Later on, the African slaves were brought to Puerto Rico as prisoners. These Africans used mashing methods to make their food. Their food was different and then it became common in the region. Hence it can be seen that the dish is originally found in African countries.

Some other commonly used ingredients are milk, curd, etc. African cuisine is famous due to its food representation. Moreover, the African fufu is a famous dish in Africa. Throughout the world, people have modified this dish.

They substitute their vegetables instead with starchy vegetables found in Africa. Consequently, the modified dishes of one region become famous in the other region. These modifications are infinite. Similarly, different cooking styles and recipe styles add versatility to the cuisines.

Recipe

Ingredients

  • Onion 1 small sized
  • Garlic 2 cloves
  • Oil 2 tablespoons
  • Shrimp 1 cup
  • Chicken broth 1 cup
  • Paprika powder 1/2 teaspoon
  • Bell pepper chopped half cup
  • Cumin powder 1 teaspoon
  • Tomatoes 2 small sized
  • Parsley 1 bunch
  • Plantain 2
  • Salt 1 teaspoon
  • Pepper 1 teaspoon
  • Olive oil 2 tablespoons
  • Chicharron
  • bacon

The procedure of shrimp sauce

  1. First, add one tablespoon of oil to the pan
  2. Then add shrimps and sauté them
  3. Now, take them out on a plate
  4. Add more oil to the previously used pan
  5. Then, put chopped onions, garlic, tomatoes, cumin powder, and paprika powder
  6. Stir these ingredients for about 1 minute
  7. Afterwards put them on a plate
  8. Now take a pan
  9. Then, add broth and bell pepper to the pan
  10. Bring it to boil and simmer them for 5 minutes
  11. Again add the shrimps to the pan
  12. Add salt and pepper to it
  13. Then sauté it for 2 minutes
  14. Remove the pan from the stove

Frying the plantains

  1. Besides this, cut the plantains into small size
  2. Take a bowl and fill in water and salt
  3. Now add those plantains and soak them
  4. After 15 minutes drain the water and make them dry
  5. Take a pan and pour oil into the pan
  6. Heat the pan
  7. After that, put in the plantains and fry them for 5 minutes
  8. Now remove the plantains from the pan into the dish

Mofongo making procedure

  1. Firstly, in a pan add oil, bacon, garlic, and salt
  2. Sauté them for 1 minute
  3. Secondly, in a mortar or chopper, add some garlic, bacon, and oil together
  4. Now add some salt to it
  5. Meanwhile, one by one add the plantains
  6. Then mash them together
  7. Your mofongo is ready
  8. Using a spoon add shrimp sauce in the middle
  9. Turn the chopper or mortar upside down to serve mofongo on the platter
